         		 Minitan is a small community in Oaxaca. Most of its habitants are Afro-Mexicans, even though they don’t define themselves as such. In Mexico African-descent people were not considered as as a distinct ethnic group (unlike the indigenous) because over the years they had lost much of their identity and traditions.          		 Fishermen go out in the morning and return in the afternoon. They are allowed to fish commercially only 4 months a year, but they continue to fish the rest of the year for family consumption.     One of the things I remember most about this place is its food. Without using an enormous variety of ingredients, the women manage to create remarkable flavors in their cuisine.
